
Mélissa Proulx is a journalist, columnist and editor. She has devoted herself with passion and creativity to the development of rich and varied journalistic content since 2002.
With a Bachelor of French Literature from the University of Ottawa and a degree in journalism, Mélissa Proulx was 21 when she was entrusted with the reins of the cultural weekly Voir Gatineau-Ottawa, a regional edition that she directed for eight years. Her path then brought her back to her region where she was head of the Art de vivre section of Voir Montréal and then as assistant editor-in-chief of Enfants Québec magazine.

The 3 Cornets is…
Noémie: First, there was the possibility of having this location in the Urban Center in Boucherville. My father, who is an entrepreneur, suggested that we start our small business with the three children together. We had a small family council and our parents helped us define our project. The idea of sorbets/gelatos was inspired by a trip they had taken to Italy.
Karl: We were 16, 17, and 19. My little sister was finishing high school, while my older sister was in her first year of university. We all had a specific role to play at the start, based on our strengths. My older sister, the artist of the family, took care of all the graphic design. I took care of the suppliers and equipment, and Noémie took care of the management and customer service.
You are now an engineer and a lawyer. The seasonal nature of your business has therefore allowed you to pursue advanced studies at the same time...
Karl: Since the dairy closes during the fall and winter, it fit in well with school. So the business was our summer occupation. We didn't really think about how it would change with our respective careers, except to say that we wanted to keep the business. Each year, we were able to make improvements so that it could run without us being involved on a day-to-day basis.
Noémie : It's like the ideal business because we've always been able to prioritize studies, both our own and those of our employees, who are all students.
Even though it's a business that "sleeps" in the winter, do you have specific times to plan for the upcoming seasons?
Developing new ideas and strategies is a continuous process, says Noémie. We call each other, brainstorm and put things in place. This was the case with our green shift this year. We changed plastic spoons for wooden ones. We use recyclable plastic and encourage our customers to recycle them. We also invite them to bring their own containers.
Have your respective careers nourished the entrepreneurs that you are and vice versa?
Karl: I would love to build my own engineering business someday. There are a lot of things I learned at the dairy that are beneficial in my field and project management in engineering helps me at the dairy.
Noémie: The dairy gave me a lot of self-confidence. Having to sell, promote the dairy, meet customers, made me more confident and solid as a lawyer.

Looking back, was it a little crazy to get into entrepreneurship at such a young age?
Karl: It was more of a gift from our parents to support us in this project, both financially and through their support and experience. Having all these responsibilities allowed us to acquire maturity very early in our lives.
Finally, what would be your favorite summer business?
Karl: I have a lot of admiration for friends who are market gardeners, Les Jardins Provost. We see how much they work continuously during the summer. As entrepreneurs, we understand better what it involves and the efforts required.
Noémie: Especially since it’s a family business. They’re so invested. It’s beautiful to see.
